Need a quick, easy and healthy recipe to boost healthy hair growth? Try this Red Pepper, Chard and Feta Frittata from nutritionist and health expert Joy Bauer.

Eggs are rich in biotin, a B vitamin that’s essential for healthy hair growth and scalp health. Because biotin is found in egg yolk, I recommend mixing whole eggs with egg whites when prepping omelets and frittatas, so you can reap the vitamin’s benefits while keeping calories down. Although biotin is often taken in supplement form, it can actually be found in a variety of foods like eggs, peanuts, almonds, wheat bran, salmon, avocado and cheese. The good bacteria in our intestines are capable of producing biotin too.

INGREDIENTS
1 red bell pepper, thinly sliced
1 medium onion, thinly sliced
1 bunch Swiss chard, stems removed and sliced into thin strips (may substitute spinach)
2 cloves garlic, minced
4 whole eggs
6 egg whites
1/2 cup crumbled feta cheese

Serving size: 1/4 frittata

TOTAL TIME: 30 mins
This recipe makes 4 servings

PREPARATION
Preheat the oven to 375°F.

Coat a large, oven-safe skillet with oil spray and preheat over medium-high heat. Add bell pepper, onion, and chard, and sauté until all veggies are soft (about 5 minutes). Add garlic and sauté for 1 minute.

Meanwhile, in a large bowl, whisk whole eggs, egg whites, and black pepper to taste. Pour egg mixture over sautéed vegetables and cook, without stirring, for 2 minutes. Sprinkle feta on top. Place pan in oven and cook for 10 minutes or until eggs are set and puffed.

Allow frittata to cool for about 5 minutes. With a spatula, turn it out of the pan, onto a cutting board. Cut into quarters and serve.
