Just in time for Thanksgiving, try these oven-baked fries with everyone’s favorite sweet tuber: the sweet potato. Like carrots, kale, butternut squash, cantaloupe, spinach, Swiss chard or pumpkin, sweet potatoes are loaded with vitamin A (beta carotene), a beautifying nutrient that can help skin and hair.
Healthy Hair Vitamins: Vitamin A-packed Sweet Potato Fries
2 medium sweet potatoes (about 8 ounces each)
Kosher salt, to taste (optional)
Ground black pepper, to taste (optional)
Other spices e.g. curry, cinnamon, chipotle powder (optional)

This recipe makes 4 servings.
Preheat oven to 400°F. Coat a large baking sheet with oil spray.
Slice the ends off the potatoes and cut the middle portions in half, lengthwise. Cut each half into wedges or strips (approximately 1/4 inch thick). Arrange in a single layer on baking sheet and mist generously with oil spray. Sprinkle with salt and pepper (plus any other seasonings you choose, like curry, cinnamon, chipotle chili powder, cumin, etc.).
Bake fries for 20 minutes, flipping them halfway through. To finish, set the oven to broil, and broil fries for 5+ minutes (depending on how brown and crispy you like them).
